What AFSC’s (usaf jobs) typically work the longest hours and vice versa?
That's difficult to say and depends a lot on the particular assignment as well as the job.
A lot of maintenance jobs work long hours on the flightline, but it can depend on which planes and what is going on at the time. Cops generally work 12 hour shifts and are also frequently deployed. Any job that requires 24 hour ops may work long hours as well. This could include some computer jobs, air traffic controller, space systems operations, intel jobs, any flying job, etc.
On the other hand jobs like finance, personnel, legal, most medical jobs, services, etc are only open and working during the duty day most of the time, which is 0730 - 1630.
In general it's the "operational" jobs that will require the longer hours, the ones directly performing or impacting the mission, whereas the more behind-the-scenes support jobs will work more regular business hours.
There are exceptions of course and it's impossible to just show you a list of the jobs that work the longest or shortest, but that's a general idea.
