How do you keep track of which jobs are high demand? Is there a frequently updated list I could check?

The recruiter has access to that list, but it is not publicly available. You'll have to work with the recruiter on it. Some jobs are always in demand though, such as explosive ordinance disposal, TACP, Pararescue, etc. Basically the dangerous jobs that most people don't want or can't qualify for.
